Brown Rice/Millet Flour Waffles
1-1/4 c. Rice
1-1/4 c. Millet
3 c. water
6 eggs separated
1/2c.oil (expeller pressed) or melted butter
1 tsp salt
2 tsp baking powder
2 tsp vanilla
1)Grind rice and millet. Mix 3 c. water.
2) (optional) At this point if I plan ahead I love to add 1 T. apple cider vinegar, lemon juice or whey, cover and let the flour water mixture ferment over night. If you don’t have time just skip this step.
3) Separate eggs. Add yolks to batter. Beat whites until fluffy and peaked. Mix oil, salt, baking powder and vanilla into batter. Fold in egg whites. Pour in waffle maker.
