Megan’s Kale Salad

oh, I love kale when it is prepared with lemon juice. The citrus breaks down the tough greens so that they are easy to eat and have quite a citrus zing flavor! The key is to cut the kale into thin strips and the longer the salad sits, the better. (I would let it sit at least 1 hour before eating. The next day it’s even better!). The mixture of the nuts and olives in the lemon juice somehow makes a fruity flavor. (Don’t ask me why). This recipe, again is adapted from the original to fit my taste.
1 bunch of kale
1/2 c. olives, chopped
1/2 c. walnuts, chopped
1/2 c. lemon juice (Fresh or bottled)
1/4 c. olive oil
Salt and pepper to taste
Strip the kale leaves off tough center stalk and cut into thin strips.
Add everything else. Toss. Refrigerate for a while and toss again before eating.
